The short answer for this collection
For our pão de queijo, follow the recipe’s stated tapioca starch requirement. Look for a dry, fine, white starch; Bob’s Red Mill explicitly identifies its tapioca flour as tapioca starch. Do not buy coarse cassava meal, tapioca pearls, hydrated tapioca dough or a whole-root cassava baking flour in its place.
Doce and azedo are different tools
Polvilho doce and polvilho azedo are not interchangeable labels for a single result. Panelinha explains that its sour starch gives more elasticity and bubbles, while sweet starch produces a denser, softer result. Its own recipe uses a particular combination.
That is a reason to follow a coherent recipe, not to add an arbitrary spoonful of sour starch to a dough. A recipe designed entirely around sweet tapioca starch can be valid too. Our cheese-bread page names the version we selected and the cheeses used in its US adaptation.

The cassava family has several product forms
Tapioca starch is extracted from cassava. Whole-root cassava flour retains more of the root’s material and behaves differently. The fact that both packages say “cassava” does not make them a one-for-one swap in a starch-based dough.
Farinha de mandioca for farofa is another shopping task. Its granular texture is useful for a toasted accompaniment; it is not the fine starch you need for cheese bread. Use the separate farinha guide when shopping for farofa.

Give the cheese and dough equal attention
Starch is only one variable. Panelinha notes that cheese moisture and fat affect the dough, and that the scalded mixture needs to cool before eggs and cheese are mixed in. Read our full method before you heat the liquid.
Check the package’s allergy and cross-contact information if you need to avoid gluten. A naturally wheat-free ingredient does not establish that every finished cheese bread is suitable for every allergy, and our recipe also contains egg and milk.
